Recipe: chocolate berry melt

DfoE season is now well underway at work, and we recently had our Practice Expedition in the Suffolk wilderness. Here is a recipe for the dessert I made for the adults supervising the students.

Chocolate berry melt

Ingredients:

  • Punnet of strawberries
  • Punnet of raspberries
  • Punnet of blackberries
  • 2 tsp sugar
  • 2 bags of Rolos
  • 1/2 Madeira sponge

Method:

  1. Place the berries in a bowl and sprinkle with sugar. Leave for an hour to draw some of the juice out.
  2. Cut the cake into chunks, and mix in with the berries
  3. On a low heat, start to stir the cake/berry mix until warm (NOT hot)
  4. Add the Rolos, stir through, and keep on a low heat, stirring regularly.
  5. Serve!

Notes: I started this recipe on a Trangia, but found it heated too quickly, so I moved the pan onto a dying barbecue which was at a much lower temperature.
